I just completed the build on 2 Pi 5 8GBs. Both of them have NVME bases (Different MFGs) and big, fast NVME drives.

Will it smoke my Windows 11 laptop?

Not even in my craziest dreams.

Is it a viable peformer for some basic to even workload intensive Linux applications?

You betcha.

Do NOT compare a Raspberry Pi 4B 8GB to a 5 8GB, the 5 is massively faster.

My 4Bs are great, I have 2 of them as well, one is running plex, the other is being set up as an open LDAP server and rsyslog host. Small network just wanting my logs in one place...

The Pi 4B for my applications, Video / graphics / audio editing is just too snoozy, even with a USB 3.0 SSD

The Pi 5 requires some tweaking within KDEnlive in particular to keep the stuttering at a minimum. But guess what? So does my Asus ROG Strix G17 Ryzen 9 5900HX GeForce 3050 Ti 16GB RAM 1TB NVME gaming laptop... It's the app...

So go ahead and run one. Either you will be happy with it, or you won't. Won't cost you a bunch to find out that's for sure.
