Mains circuitry is one part, but IEC 60335 is pretty comprehensive. For example, any circuit that can draw 15W or more during a fault condition needs to adhere to pretty strict fire safety requirements including glow-wire test. This can be handled via fast acting fuses on the supply, if it's not integrated on the board. Depending on pollution degree and overvoltage category, I would also expect clearance and creepage distances to be of interest.IEC 60335 is to do with the mains input circuitry and other electrical safety issues so the Pi's certification is irrelevant. If you have an integral mains supply then that does need conformance testing (which is why so many things have wallwarts nowadays)
I'll admit that while I've studied parts of IEC 60335, it's been a while and I've yet to do a full read (expect to do that in the next week or two). So maybe it is as simple as you say.
