Beginners • Re: RPI5 to be used as a "normal" server.

See my previous post. If you choose a 'lite' version of PI OS then you don't get the GUI.

There are no additional uses defined except the user (previously always PI) you define in the PI Imager which has SUDO access.

Which PI OS are you running?
Bookworm as this is Pi5., so there is only 1 version. 'Lite' is not a different version, it is just a pre-installation with no X11/Wayland Desktop/GUI installed.
With raspi-config one can set 'boot to console' or so. Or in any modern Linux:
