uf2 files are descriptors of what area of memory to overwrite with what. The flash nuke uf2 overwrites (deletes) everything. It's possible to generate uf2s that overwrite (delete) specific areas of memory. In order to build one you will first need to identify what area of the memory you want to delete / keep. In your case, it seems to be whatever the old uf2 wrote to. If that uf2 only wrote to the beginning of flash, you can figure out what to delete by looking at the bin size. There is no log embedded inside the pico that says 'my last uf2 wrote to these places', as would be necessary to have a 'delete old uf2' functionality. There's just memory.
