I'm with bjtheone. It isn't easy and will cost more than an entry level 'droid tablet. Possibly more than an entry level ipad once you factor in your time.
There is an offical 7" touch screen but I've no idea about current availability so you best ask google*. If you can get one you won't need a separate driver board. Same goes for many of the third party screens but those tend to be smaller and/ot lower resolution.
You likely need to add some kind of audio output too. Or at least speakers/headphones and an apropriate amp.
Battery management will need to be done externally to the Pi as no Pi has that built in.
Same for USB PD. The Pi has it but it will only negotiate for 5V 5A for it's own need. You probably want something that negotiates more apropriately for your battery charger/manager then buck/boot convert to what your chosen Pi needs. And to what your chosen peripherals need if it's something else.
As for which Pi model, I'd go with a CM4 varient with onboard EMMC and WiFi coupled to a minimal or custom carrier board.
Then you need to sort out an OS...
